Also known as the Silk Road Dreaming, we blend our hand-harvested bamboo shoots with ancient herbs and spices (fenugreek, roasted mustard seeds, rosemary, turmeric and smoked pepper just to name a few) to create this sweet, sour & warming chutney.

BAMBOO HOT CHILLI CHUTNEY

Also known as the “Sleeping Dragon” the Big Heart Bamboo Hot Chilli is for lovers of heat, spice and all things nice.
The feeling of this chutney is described as a slow-burning cedar wood placed upon an open fire- aromatic and warming, but not overwhelmingly hot.

Old Hamii
Bambusa oldhamii
mid January – April
This bamboo is smaller sized shoot originating from southern China. Also known as sweet edible shoot. When freshly harvested the sweet aromas resemble that of freshly cut sugar cane.
Giant Bamboo
Dendrocalamus latiflorus
mid February – mid April
Native to Taiwan, the Giant Bamboo is a denser shoot than the Asper, ideal for pickling when the weight is between 400grams and 3kgs.
Asper Bamboo
Dendrocalamus asper
early March – early May
Asper is the largest of the species that we have at the farm and has a texture that resembles and apple and is slightly less bitter than some of the other shoots. Ideal for salads and other summer dishes.
Madake Running Bamboo
Phyllostachys bambusoides
August – December
A lightweight shoot of the running species, also known as ‘pig skin’ bamboo. Ideal for roasting and tapas.
Moso Running Bamboos
Phyllostachys pubescens
August – December
Native to China, it is considered a delicacy amongst shoot connoisseurs. Slightly more difficult to harvest dues to the shoots being a little more hidden beneath the surface. Traditionally used in nigiri sushi dishes.
Important Note: Bamboo, in it’s natural state, has toxins that can be harmful if not prepared properly. In preparation, prior to consuming, all bamboo shoots must be peeled, sliced thinly into strips and boiled in lightly salted water for eight to ten minutes. Discard the water and rinse. It is your responsibility as a consumer, to make sure that this is done.
